Pork Sausage and Wild Boar Meatballs

ingridents:

Pork Sausage:

      • 15 pounds pork sausage

Boar Meatball:

      • 15 pounds wild boar
      • 2 cups breadcrumbs
      • 5 eggs
      • 1 tablespoon oregano
      • 1 teaspoon chili flakes
      • 2 onions, sauteed
      • 2 tablespoons garlic, minced

Squash:

      • 3 pounds summer squash
      • Salt and pepper, to taste

Artichokes:

      • 10 pounds artichokes

Raddicchio:

      • 5 radicchio
      • Balsamic vinegar, drizzle

directions:

 

Pork Sausage
1. Poach for 10 minutes.
2. Grill until cooked through.

Boar Meatball
1. Grind meat.
2. Add breadcrumbs, oregano, chili flakes, eggs, sautéed onions, and garlic.
3. Roast on medium heat until cooked through.

Squash
1. Slice, season, and roast in oven until tender.

Artichokes
1. Clean and trim.
2. Poach in court bouillon until tender.

Raddicchio
1. Slice and grill.
2. Finish with balsamic.
