      • 1 kg crocodile or alligator meat
      • cubes
      • your prefered brand of mild Cajun seasoning
      • 1/2 can of beer
      • 2 eggs
      • 4 heaping tbs of yellow mustard
      • tabasco (to taste)
      • oil in a heavy pot
      • corn flour


      1. Heat oil to frying hot.
      2. Mix all ingredients except the corn flour and meat in a bowl.
      3. Place meat in the mix to coat
      4. Take a few pieces at a time and roll them in corn flour..
      5. Add to the oil and fry until golden brown
