- 1 kg crocodile or alligator meat
- your prefered brand of mild Cajun seasoning
- 1/2 can of beer
- 2 eggs
- 4 heaping tbs of yellow mustard
- tabasco (to taste)
- oil in a heavy pot
- corn flour
- Heat oil to frying hot.
- Mix all ingredients except the corn flour and meat in a bowl.
- Place meat in the mix to coat
- Take a few pieces at a time and roll them in corn flour..
- Add to the oil and fry until golden brown
