Rattlesnake Chili

4 Persons

      • Vegetable oil
      • 1 large onion, diced
      • Red Chile Sauce, recipe follows
      • 6 rattlesnake fillets, or 8 ounces meat
      • Double sweet corn, kernels only, to taste
      • Poblano peppers, diced, to taste
      • Serrano peppers, diced, to taste
      • Jalapeno peppers, diced, to taste
      • Salt

Red Chile Sauce:

      • Ancho peppers, diced, to taste
      • 1 white onion, diced
      • Several tomatoes, chopped
      • Cumin, whole seeds, to taste
      • 2 tablespoons honey
      • 1 cup chicken stock


      1. In a large skillet, heat the oil and add the onions. Cook the onions until they are soft and slightly tender. Add the Red Chile Sauce and the remaining ingredients. Cover the skillet and stew all of the ingredients together for approximately 1 hour. Season the chili with salt.

Red Chile Sauce:

      1. Combine all of the ingredients in a blender and process until smooth.
