Wild Boar and Chanterelle Meat Pie

      • 200 g flour
      • 4 eggs
      • 125 g butter
      • Salt
      • 200 g fresh Chanterelles
      • 2 Shallotte’s (or small onions)
      • 4 table spoons olive oil
      • 400 g ground wild boar meat
      • Pepper
      • 1 pinch cayenne pepper
      • 250 g crème fraiche


      1. Mix the flour, 1 egg, the butter, 2 table spoons water, and a pinch of salt and work it into dough. Place you dough in the refrigerator to chill for about a half an hour.
      2. While your dough is chilling wash and dry your chanterelles. Peel and finely chop up your shallot’s. Heat up the olive oil and sauté your shallot’s and chanterelles. When the onion turn glassy add the ground wild boar, and let it lightly cook. Season with salt, pepper, cayenne pepper, and thyme.
      3. Preheat your oven to 180 degrees Celsius (approx. 400 degrees Fahrenheit) Roll out your dough and place it in a buttered pie dish. Pour your wild boar and chanterelles into the crust. Mix the crème fraiche with the remaining three eggs with a bit of salt and pepper and pour this over the boar and chanterelles.
      4. Bake for around 40 minutes.
