ingridents:

      • 4 oz crocodile, sliced thin
      • 1 Tbl garlic, chopped fine
      • 1 oz ginger, chopped fine
      • 2 oz fresh cilantro, chopped
      • 1 tsp fresh thyme, chopped
      • 1 oz sambal chili paste
      • 1 Tbl sesame oil
      • 1 rib celery, julienned
      • ½ red onion, julienned
      • Fresh cilantro leaves, for garnish
      • Extra virgin olive oil, as needed

directions:

      1. Whisk together garlic, ginger, cilantro, thyme, sambal, and sesame oil. Add crocodile to marinate. Sear on cast iron skillet for 1 minute on each side.
      2. Arrange crocodile in bowl and drizzle with olive oil. Garnish with celery, onion, and cilantro leaves.
