» 1 whole ripe golden pineapple
» 1 cup sugar
» 2 tbsp ground cinnamon
» 1 tsp ground cloves
» 3 tbsp butter, melted
Cut the crown (the leafy part) off the pineapple and cut the rind off the fruit.
Place the sugar, cinnamon, and cloves in a bowl; stir to mix.
Preheat the grill as hot as it will go, making sure the grates are well oiled.
Cut the pineapple crosswise into 1/2-inch slices.
Brush pieces with butter. Sprinkle 1/3 of the spice-sugar mixture over sides and ends to crust thickly and evenly.
Roast pineapple slices until darkly browned on the outside, 15 to 30 minutes in all, depending on how fire is. When slices start to brown, after five to 10 minutes, brush them on all sides with more butter and sprinkle more spiced sugar on them. After five minutes, repeat with remaining butter and sugar. Roast until pineapple is dark brown and thickly crusted with sugar.
