Preheat the oven to 300 degrees F. Heat the olive oil to a large skillet over medium heat.

Sprinkle the buffalo topside roast with salt and pepper. Place the roast in the skillet and brown on each side. Cook for about three minutes on each side.
Place the roast in a large baking dish. Place the onion, carrots, celery, garlic and bay leaves in the dish around the roast. Sprinkle with rosemary and thyme, then pour the stock around the bottom of the dish.
Place the baking dish on the middle oven rack and bake for 90 minutes.
Mix the flour and water together in a small bowl. Stir the mixture into the liquid around the roast. Bake the roast for an additional 30 minutes.
Remove the roast from the oven and let in rest for 15 minutes before serving. Spoon the gravy in the pan over the meat and vegetables.
Put it on the grill and cook for a minute and a half on each side. Let rest and enjoy!~
